Background

A San Francisco landmark since 1949, the restaurant is known for its quality prime rib carved tableside. It is also known for hosting yearly dinners for the Blue Angels and San Francisco 49ers. But, over time, House of Prime Rib lost some of its luster and after a negative review, it was removed from the list of San Francisco’s Top 100 restaurants.

 

Challenge

The owner brought Bernd Gerwig on board in 2007 to help turn things around. Bernd analyzed the entire operation to determine what improvements were necessary to restore this venerable restaurant’s reputation. He evaluated the service, making necessary changes in the staff, and designed an industry- leading wine list, which included descriptions of every wine to remove the fear factor and assist customers in making their choice.  House of Prime Rib cart

 

Results

Bernd helped bring HOPR into the 21st century by introducing them to the online reservation system, Open Table. As bookings improved, they increased their presence on the site. Guest volume on Saturday nights increased from 600 to 800 under his management, and the restaurant’s Zagat service rating went up one point 4 years in a row! Within one year, HOPR was back on Michael Bauer’s Top 100 list from the San Francisco Chronicle, and Anthony Bourdain’s “No reservations” segment was filmed under Bernd’s supervision, as well as “Check Please”.
